A bit of a DIY freak, I’m always trying to make things rather than buying them (just to see if I can). So my ponderance is this: does anyone have a good recipe for a schmalzer?
Ok, splendid! So if one were to start with a pre-ground natural snuff (or even a twist), would you think that merely mixing in a…crisco/oil and some pureed figs or dates would work?
I would say dried & ground dates and mineral oil. Stay away from any oil that can go rancid. Also, a good majority of the flavor in schmalzler is in the saucing and fermenting.
If I were going to start making my own Schmalzlers, I think rather than start with whole leaves the first time around, I’d do a test run with Sternecker Echt Fresco Ungefettet first. Just a thought.
What about jojoba oil? I think it doesn’t turn on you_,_ and is rather natural.
I too am looking for a good sauce recipe. Not necessarily for a schmalzler but if I where to schmalz I would certainly use clarified butter. I have tried using sesame oil with good results but it’s not a favorite scent.
Im going to experiment with this too. Im g to use sternecker unfeggetid as a base. For me the biggest question is how to keep it from going rancid if I want to send it to people to try.
@johnnyfriday Refrigeration will keep it from spoiling for quite a while. Even butter can last about six months in the cold part of a refrigerator. Mail it during winter or tell people to use it immediately.
Coconut oil could be an option.
Thats another interesting suggestion slide. Id like to make an horchata style one. Ill work on some, and we’ll trade how’s that sound?
Monkey on snuson used coconut oil to make a schmalzer with American scotch’s. People that tried it liked it it seems.
A schmalzer from an American scotch? I’d think that’d be to fine of a grind.
@SnuffinClown It’s surprising how much moisture dry snuff can absorb. A lot of us view the moister snuffs as being a larger grind but actually the tobacco is just swollen with moisture.
Seems to have worked out well for him…
yeah I’ve observed the same thing. Certain snuffs people have said where coarser when dried out have a toast like consistency. For example a number of the Freybugs and treyer snuffs.
Ok, I can see how that would be the case.
