Rock hard cheese and bacon

Full tin sitting around for some time. Tried today with no noticeable bacon flavor but cheese taste is very present. Dose the cheese flavor increase with age?? Also why did it from to a brick. Not a bad thing if you like thing aged like wine but mis the bacon flavor.
